In the heart of Kawagoe—often referred to as “Little Edo”—stands Matsumoto Soy Sauce Brewery, a distinguished establishment preserving over 250 years of Japanese fermentation heritage. Founded in the Edo period, the brewery’s main kura (storehouse), constructed in 1830, remains fully operational today. Inside, 40 towering cedar fermentation barrels—some in continuous use for nearly two centuries—quietly nurture soy sauce using time-honored, artisanal methods.
